  • About Supernova | Colombia

    Supernova is our newest concept created to sit alongside our Nova blend. A medium-dark roast profile perfect for espresso brewing or if you enjoy a more well developed filter roast. Roasted to tame acidity while enhancing body and sweetness. We feature a range of different washed and honey-processed coffees throughout the year.

    This current version features a classic washed coffee from Tolima in Colombia. Grown on the Meseta de Popayán at 1,500–2,070m above sea level, this coffee comes from one of Colombia's most distinctive growing plateaus. Sheltered by the Andes mountain range, the region enjoys an unusually consistent climate and altitude across its farms — the kind of homogeneity that produces a reliably balanced cup, session after session.

    Volcanic ash soils, annual rainfall of 1,700–2,000mm, and a steady 19°C mean the cherries develop slowly and evenly. The result is a clean, approachable profile with floral brightness and caramel sweetness.

This coffee is the work of around 65 smallholder growers farming the Meseta de Popayán in Colombia's Cauca department. Each contributes to a shared quality programme that rewards exceptional cherry with premiums of up to 20% above market price — an incentive that builds long-term relationships and keeps standards consistently high.

Processing Method

Washed

The washed process is the traditional method where the fruit is removed from the bean after harvest using water and de-pulpers. The coffee is sometimes fermented to break down remaining sugars before being washed in grading channels and then dried. This results in a “clean” cup that highlights the bean’s inherent origin characteristics and bright acidity.

This coffee may include several different coffee varietals. On many farms, multiple cultivars are grown side-by-side and harvested together. In other cases, a coffee may be composed of several components selected to create a balanced flavour profile. Each varietal contributes its own characteristics to the final cup.
