The farms surround their processing mill and are planted with various varietals, including Villa Sarchi, Catuai, SL28 and Geisha. Their focus is on producing mainly honey and natural micro-lots with varietal separation and all processing takes place on site.

Harvesting & Processing

Coffee is very carefully hand harvested to ensure only ripe cherry is selected. After harvesting the coffee is either processed as a honey or natural:

Natural: Coffee cherry is laid out to dry on raised beds or patios and turned regularly to ensure even drying. Different lots are dried using different layer thickness to control fermentation.

Honey: Coffee cherry is pulped using a Penagos eco-pulper to remove the outer layer of fruit before drying on concrete patios. The Penagos can be controlled to remove different amounts of fruit to create different types of honey processed coffees. These are usually referred to as white, yellow and red honey.
