  • About Jardines del Edén Striped Bourbon | Colombia

    A rare and visually striking mutation of the classic Bourbon variety, Striped Bourbon was first discovered in San Adolfo, Huila, recognised by the distinctive vertical stripes running down its cherries. Cofinet planted this exotic cultivar at their Jardines del Edén farm in Pijao, Quindío, in 2020, and it has thrived in the farm's high-altitude conditions ever since.

    Pickers selectively harvest only the ripest cherries, transporting them in grain-pro bags during the cool early morning hours to La Pradera, Cofinet's processing centre. On arrival, cherries are floated to remove low-density beans, then hand-sorted to eliminate any underripe or faulty fruit. Wastewater is filtered through vetiver grass beds as part of Cofinet's closed-loop sustainability programme.

    The lot then undergoes 45 hours of aerobic fermentation before being moved to raised beds inside a controlled greenhouse (20–38°C) for 7 days of drying, with cherries turned regularly to ensure even moisture loss. The result is a cup of balanced complexity — delicate floral sweetness layered with red berry fruit, a silky mouthfeel, and a clean, lingering finish.

    This is a stunning high cup score microlot scoring 89 points. Tasting notes are complex and include jasmine, red fruits and raspberry.
