Finding great tasting organic decaf coffee can be challenging. Quite often these are produced using poor quality coffee that isn't traceable to farm or co-operative. We've managed to find a great tasting Swiss Water Decaf process organic coffee from the members of the Sol Y Cafe co-operative in Peru. Swiss Water is a completely chemical free decaffeination method that complies with organic standards and retains as much flavour as possible.

Farm Overview:

This coffee is produced by co-operative members spread across 12 districts. Their aim is to improve the living conditions of their members through the increase in productivity, production, and profitability as well as quality and the positioning of themselves within niche markets. They support this with the provision of financial support, production of fertilizers and technical assistance. The fertilizers have taken a huge step forward with the joint cooperation of another of our suppliers from Honduras, using microorganisms to faster create organic compost the farmers need, whilst preserving the integrity of the landscape.

Harvesting and Processing:

When the coffee is picked, it is pulped and dried on the farm and then brought to Jaén, where the headquarters are located and where there are additional drying facilities. If the coffee is above 12% on arrival, it is further dried via either small raised beds, patios (like in the picture below) or with heated drying facilities.

Coffee Drying on patios in Peru

It is then graded and tasted, and only used if quality criteria are met at the correct moisture percentage. Once dry, coffee is stored in parchment here before being sold,
when it is transported to the dry mill facilities at Norandino, in neighbouring Piura.

Coffee is then sent for decaffeination by Swiss Water.

Tasting Notes:

Rich chocolate, nuts and gentle balanced fruit notes that include red berries.

Brewing:

This coffee works well for all brew methods.

Filter: Dose 15g, water 250g.

Espresso: Dose 17 gram to 40 gram yield over about 30 seconds.

This coffee is available as wholebean and pre ground but we recommend always grinding fresh before brewing. We sell a range of grinders if you would like to grind this coffee fresh at home.
