  • About La Karola Dark Room | Costa Rica

    Our Costa Rican coffees are sourced directly by us from several dedicated, small producers. This stunning microlot comes from our friends at La Karola located in the Tarrazu region. They grow a range of varietals, mainly red and yellow Catuai and a small amount of Java and H10 Milenio. This stunning microlot was harvested from their Milenio varietal trees and processed using the following method:

    - Perfectly ripe cherry was washed
    - Fermented in open tanks for 48 hours in the dark
    - Moved to raised drying tables in a dark room for slow drying
    - Airflow, temperature and humidity were controlled using fans
    - Coffee was dried for 45 days to reach the correct moisture level

    This experimental method with natural fermentation followed by slow, controlled drying has resulted in a coffee with a high cup score and an amazing flavour profile. Tasting notes include black cherry, red grape, maple syrup, plum and treacle. Something truly special!

The Mora family has owned the farm since 1960 and covers an area of 4 hectares in total split into different farm sections. We've been buying coffee from them since 2019 and love their dedication to producing fantastic natural processed coffees.

Costa Rican farmers are known for their tendency to experiment with various post harvest processing method and for planting rare and interesting coffees, such as SL-28 and Geisha. We've been buying our Costa Rican coffees direct from the same producers for several years with the help of Selva coffee.

Processing Method

Dark Room Natural

Perfectly ripe cherries are washed, then fermented in open tanks in complete darkness. The coffee is then dried in a dark room, where fans carefully control airflow, temperature and humidity throughout a slow 45-day drying period to reach optimal moisture levels.

Coffee Varietal

Milenio H10

Milenio H10 is a hybrid varietal bred for high productivity and resistance to major coffee diseases, including leaf rust. Developed through research programs in Central America, it is particularly notable for being an F1 hybrid, meaning it benefits from hybrid vigour – growing more vigorously and yielding more than its parent plants. Cup quality can be quite good, with a clean and balanced profile, though like many hybrids it requires specific growing conditions to show its best characteristics.
