  • About Finca Filadelfia | Guatemala

    Few farms carry a story quite like Finca Filadelfia. Nestled in the Antigua Valley in the shadow of three volcanoes, this is where Guatemalan coffee growing began.

    In 1864, Manuel Matheu made a pivotal decision — replanting his failing cochineal farm in coffee. After his first harvest he sailed to London to sell the crop, returning so successfully that the President of Guatemala commissioned him to teach other farmers to do the same. The Antigua coffee region was born.

    Over 160 years later, the Dalton family are still at it — now in their sixth generation — with the same obsession for quality. Marta Dalton runs Coffee Bird focusing on selling the family coffee around the world. This is a classic, high altitude Guatemalan grown on the north side of the Antigua Valley and processed through careful washed preparation and dried on concrete patios. Tasting notes include green apple, plum and cocoa.

Processing Method

Washed

The washed process is the traditional method where the fruit is removed from the bean after harvest using water and de-pulpers. The coffee is sometimes fermented to break down remaining sugars before being washed in grading channels and then dried. This results in a “clean” cup that highlights the bean’s inherent origin characteristics and bright acidity.

This coffee may include several different coffee varietals. On many farms, multiple cultivars are grown side-by-side and harvested together. In other cases, a coffee may be composed of several components selected to create a balanced flavour profile. Each varietal contributes its own characteristics to the final cup.
