About Los Luchadores | El Salvador
JASAL, the farm that produced this microlot, is known for its processing flexibility and eye for detail, producing many top lots, and Los Luchadores is their ‘Prize Fighter’. Extra commitment and effort were taken to ensure that the best ripe, pacamara varietal cherry was selected for this microlot.
Pacamara (an El Salvadorian cross between Pacas and Maragogype) is gathered from two contributing farms. El Molino provides the most with a smaller contribution from Finca San Francisco. Both are part of the Jasal estate.
Cherry is processed at their centralised processing mill, Beneficio Los Cruces. After a natural anaerobic fermentation, the coffee was pulped and then soaked, Kenyan style, for 10 hours in clean water. After washing to remove the mucilage the coffee was then soaked a second time in clean water. This is a wonderfully clean tasting coffee with notes of candied orange and brown sugar. -
