This is a stunning high-cup score micro-lot produced from Pink Bourbon varietal trees grown by small-hold farmers at high altitudes in Colombia. Pink Bourbon is a rare varietal that has become well-known for producing incredible flavours.
Las Nubes farm is located in the Agua Negra village, just 15 minutes from the municipality of Pitalito, at an altitude of 1,700 m above sea level. Las Nubes, was acquired in 2020 by Claudia Samboni.
The farm location and excellent micro climate are all perfect for the production of excellent coffees. Strategically uniting the air currents that come from the Laboyos valley to meet the coolness of the mountain of the natural reserve that surrounds the farm.
They focus on producing various varietals and processing methods to create exciting micro lots.
Harvesting and Processing:
- Coffee is fermented in sealed metal drums for 60 hours
- Pulped to removed most of the fruit leaving some mucilage
- Fermented in sealed metal drums for 140 hours
- Coffee is washed to remove all mucilage
- Dried on raised beds for 20-25 days
