This coffee comes from José María Rivera who is 61 years old and owns the farm El Torres which is about 5 hectares in size with 2 hectares of coffee trees The farm is planted with Caturra and Pink Bourbon and annually he produces around 3500kg of green coffee. He has been growing and producing Colombian speciality coffee for 30 years and has been part of the ASORCAFE co-operative for 18 years.

Asorcafe was founded on July 11, 2003 in the town of Pedegral in Inza and currently there are 290 members who are part of the association. The association was set up to help these producers become organised to sell their coffees as specialty but also provide a framework and structure to further their education and progression to improve the economic and social conditions for themselves, their families and their community.

These small producers work on plots of land between 1.8 – 5 ha in size and farm coffee up to altitudes of 2200 masl. The farms are planted with caturra, typica, bourbon, tabi, castillo and some pink bourbon. 

The coffee harvested at El Torres washed sorted, pulped and fermented for about 24 hrs. After fermentation the coffee was washed a second time and dried on raised tables.

This processing method produces Colombia speciality coffees with very clean flavour character and tasting notes include red plum, sweet lemon and chocolate.
