  • About Bwishaza carbonic natural | Rwanda

Our coffees from Rwanda are directly traded with producers and we are able to offer full transparency and detailed information on these coffees. For more information on how we source coffees take a look at our Transparency Report.

This is a special preparation limited edition micro-lot produced using a technique known as carbonic maceration:

    1) Carefully harvested ripe cherry was floated and washed to removed defects.
    2) The cherry was then fermented in sealed bags for 48 hours to kick start fermentation.
    3) After fermentation the coffee was dried on raised table.

This technique helps to enhance flavours by kick starting fermentation before the drying process takes place. This helps to create additional fruit flavours with more acidity. Tasting notes include strawberry, black cherry and honey.

Processing Method

Carbonic Maceration Natural

The carbonic maceration natural process, borrowed from winemaking, involves placing whole cherries in a tank and actively injecting CO2, or allowing it to develop naturally and to flush out oxygen. This triggers fermentation from the inside out, producing intensely aromatic, juicy profiles with layered sweetness.  Carbonic maceration natural and anaerobic fermentation natural terms are often used interchangeably in coffee.

Coffee Varietal

Bourbon

One of the oldest and most influential arabica varietals, Bourbon traces its origins to the island of Réunion (formerly Bourbon), where it was cultivated from Yemen's Typica stock. It's prized for its complex sweetness, often yielding notes of caramel, fruit, and chocolate. Bourbon tends to be delicate and susceptible to disease, but its cup quality is considered exceptional, and it forms the genetic backbone of many modern varietals.
