About Merly Leon | Peru
This microlot comes from a farm owned by Merly Leon. Harvested from Yellow Caturra trees on her 4 hectare farm.
After the selective harvest, the coffee beans are fermented for 24 hours and then pulped to remove the outer layer of fruit. The following step is a second fermentation, which lasts for 72 hours and involves all the organic matter from the pulping process, contained in special plastic bags. After the fermentation process is complete, the coffee beans are washed and then dried in the shade for 25 to 30 days. -
