  • About San Juanillo Anaerobic | Costa Rica

This is a truly unique and distinctive coffee produced specifically for us by our friends at San Juanillo and the Patalillo micro mill. We've been buying their coffee since 2019.

After harvest, the coffee was fermented in sealed containers free from oxygen for 48 hours before drying on concrete patios as a natural process. This is a stunning coffee with tasting notes that include cherry, grapefruit and a molasses like sweetness.

The Producer

San Juanillo farm

Tomas Gutierrez and Allan Vargas bought the farm in 2007 with the intention of regenerating the landscape and soil and planting new and exciting varieties. We first bought coffee from San Juanillo farm in 2019 and have visited several times. They grow various varietals using natural farming methods that encourage insect and bird life.
