Colombia - El Silencio Red Fruits

Varietal –  Pink Bourbon
Preparation – Two stage extended ferment washed
Location – Palestina Huila
Altitude – 1700-2200 masl

This is a stunning high-cup score micro-lot produced from Pink Bourbon varietal trees grown by small-hold farmers at high altitudes in Colombia. Pink Bourbon is a rare varietal that has become well-known for producing incredible flavours. 

This is our second coffee from the same group of producers. The previous coffee was called 'El Silencio Panela' due to its amazing sweetness. This micro lots has been given the name 'El Silencio Red Fruits' due its fruity flavour profile. 

EL Silencio Red Fruits is a collective lot of the hard work of 5 farmers from the municipality of Palestina. Palestina region is known for many agricultural products, Sugar cane is one of them. Panela is a type of unrefined whole cane sugar commonly used in Latin America, particularly in Colombia and Venezuela. It is made by boiling and evaporating sugarcane juice until it thickens and solidifies into a compact block or cone-shaped mass. In terms of flavour profile, panela has a distinct caramel-like taste with hints of molasses. The producers gave this micro-lot the name 'Panela' due to the perceived similarity in the flavour profile.

Palestina municipality is located in the southern part of Huila state. The area is surrounded by mountains and also national parks, including “Cueva De Los Guacharos” which crosses Huila to the states of Caquetá and Putumayo. The microclimate in the municipality of Palestine is perfectly suited to grow coffee that has the potential for very high cup scores.

Harvesting and Processing:

The coffee is very carefully hand harvested from pink bourbon varietal trees.

The washed process relies on a combination of multiple fermentation steps and pulping processes using water:
  1. The freshly picked cherries are dry fermented for 12hrs. 
  2. The coffee is pulped to remove the outer skin and some of the mucilage.
  3. The coffee is fermented for a second time for 24 hours in tanks soaked in water
  4. Coffee is washed and dried on raised beds.

Tasting Notes:

This is a stunning coffee that showcases the amazing flavour profile of high altitude pink bourbon coffee. With a cup score of 87+ you can expect a wide range of tasting notes that include red apple, watermelon, cranberry and a lovely brown sugar sweetness.

Brewing:

This coffee works well for all brew methods. 

Filter: Dose 15g, water 250g. 

Espresso: Dose 17 gram to 40 gram yield over about 30 seconds. 

This coffee is available as wholebean and pre ground but we recommend always grinding fresh before brewing. We sell a range of grinders if you would like to grind this coffee fresh at home.

Loads of flavour and so smooth

Just the coffee I was looking for, smooth, long lasting with wonderful flavour of fruits, hazelnuts and light toffee. The roasting used releases a great nose and the taste equals it in the cup. Using an aeropress with cold milk, a coffee for savouring, I have ordered more.

Quintessential Third Wave Coffee…?

This coffee is very characterful, and reflects many of the most typical trends in speciality coffee - high grown, washed, lightly roasted. Brewed with boiling water and a fine-ish grind it makes a great V60 or Orea cup. Red fruits is right.

I’ve also made this as a modern style espresso 1:2.5+ and enjoyed it. Again, fruity and with surprisingly good body for such a long ratio. Needs a fine grind though.

We’ve just re ordered this and the new Columbia you have . Very nice indeed ,smooth but good depth . Seem to enjoy most Colombian & Costa Rica coffees , don’t enjoy African ones .

My Daughter was disappointed with this coffee

Bought this for my Daughter, expecting it to be excellent with a red fruit-driven profile that she (and myself) normally like. As I was thinking of ordering some for myself, I asked her to taste it first.
She said it was just okay, which disappointed me because it had a premium price tag.
Not sure I’ll be ordering some now, especially as the Rwanda Bwishaza Natural is back, which we both loved.
