  • About La Palmera | Colombia

    Produced from coffee grown and harvested by small hold farmers in Acevedo.

    The Castillo coffee variety, developed in Colombia, is widely known for its resilience and unique flavour, making it one of the most popular choices among Colombian coffee farmers.

    This coffee undergoes a meticulous natural process managed by Qima, which begins with fresh cherry harvesting and careful sorting to ensure quality. The cherries are then submerged in water for 48 to 72 hours, allowing a controlled fermentation that develops complex flavours. Following fermentation, the beans are dried on African beds until they reach the ideal humidity. Finally, a precise mechanical drying stage ensures a stable humidity of 10-11%, preserving the coffee’s unique characteristics and depth of flavour.
