  • About Finca Villaure | Guatemala

    This washed coffee comes from Aurelio Villatoro's farm located at 1700 masl on steep mountain slopes. His village, Hoja Blanca, sits right on the edge of Cuilco in western Huehuetenango, close enough to the border that Mexico is only about a kilometre away. The slopes here are steep, dotted with award-winning lots, most of them his family's.

    Coffee cherries are hand-harvested from December to March, with only properly ripe cherries selected for processing. They're pulped within six hours, fermented in concrete tanks for 24 to 36 hours, then washed, sorted and dried slowly on cement patios. This is a classic, clean Guatemalan coffee with tasting notes that include dates, caramel and a milk chocolate-like body.

The Producer

Aurelio Villatoro

Aurelio grew up around coffee. He trained as a mechanic after school, then went back to his father's farm to carry on the trade, and in 1986 started his own plot, Villaure. The farm produces high cup score washed coffees from several varietals.

Processing Method

Washed

The washed process is the traditional method where the fruit is removed from the bean after harvest using water and de-pulpers. The coffee is sometimes fermented to break down remaining sugars before being washed in grading channels and then dried. This results in a “clean” cup that highlights the bean’s inherent origin characteristics and bright acidity.

This coffee may include several different coffee varietals. On many farms, multiple cultivars are grown side-by-side and harvested together. In other cases, a coffee may be composed of several components selected to create a balanced flavour profile. Each varietal contributes its own characteristics to the final cup.
