Brewing: This coffee works well with all filter brewers and espresso. For filter we recommend a 1 - 16 brew ratio, and for espresso a 1 - 2.5 brew ratio.
We've been buying coffee from the Peralta farms for several years and are very excited to have found an exclusive red honey micro lot. Santa Maria de Lourdes is owned by Octavio Peralta and the farm covers an area of 35 hectares with an additional 45 hectares of protected rainforest. The large farm is split into smaller sections in order to separate different varietals. This red honey processed Caturra comes from the San Jose de Las Caldas plot is a small lot of just 550kg.
Coffee is hand harvest and sorted to a very high standard the employees of the farm. After picking and sorting the coffees are pulped to remove about half the fruit and mucilage from the coffee. With a moderate amount of mucilage still intact the coffee is laid out to dry on raised beds in a poly tunnel. This protects the coffee from rain and allows for even and consistent drying. The results are outstanding, a well balanced cup with very sweet brown sugar and red apples notes. The honey process adds body creating a rich and silky mouthfeel. This makes this coffee really shine for espresso but it's also great for all brew methods especially if you enjoy coffee with a good balance of sweetness and body.
