The Los Nogales estate in the Apanaca Llamatepec region of El Salvador is a very special farm. Launched by the farm’s owners, the Salaverria family, Project Nogales is a unique opportunity through which buyers are invited to chose their coffee by plot of land, process and variety.

We have three lots from the El Roble plot including a Red Bourbon that has been processed using both the Natural and Double Soaked Washed methods, as well as a Red Honey processed Caturra.

This lot is processed similarly to a lot of Kenyan coffees. The coffee is pulped, leaving as much mucilage intact as possible, then soaked under clean water for 10-12 hours dependant on temperature. After fermentation, the mucilage is removed and then the parchment is soaked in a tank with fresh water for a further 10 hours. This soak allows proteins and amino acids to develop which is thought to result in higher levels of acidity and complexity in the cup profile.
