Farmers in Colombia produce some of the most incredible coffees in the world. The diversity of flavours is largely due to the wide range of varietals, variable terrain and a keen desire to experiment with post-harvest processing.
Over the last few years, we've had a fantastic range of experimental processed micro-lots from small farms and interesting varietals.
Our latest coffee comes from Sebastian Gomez, owner of Finca La La Divisa located near to the town of Circasia Quindio. He focuses on growing and harvesting single varietal micro-lots followed by interesting and unusual processing methods.

Coffee was carefully harvested when fully ripe from Pink Bourbon varietal trees. Pink Bourbon is a rare varietal that has the potential to produce incredible flavours.
The full process is detailed below:
Hand sorting coffee cherry
This method is now commonly known as a 'carbonic maceration'. The main difference between this and a traditional natural processed coffee is the sealed fermentation process. This oxygen-free fermentation increased the acidity by dropping the pH and helps to kick start the development of intense fruit flavours.
This is a stunning high cup score (87+ SCA cup score) micro lot with wonderfully complex flavours. Tasting notes include passion fruit, pineapple and molasses-like sweetness.
This coffee works for all brew methods however the light roast and very complex tasting notes make this coffee most suited to filter brewing without milk.
Filter: Dose 15g, water 250g.
Espresso: Dose 17 gram to 40 gram yield over about 30 seconds.
This coffee is available as whole bean only. We sell a range of grinders if you would like to grind this coffee fresh at home.
It’s a disaster, I’ll never be satisfied with any other coffee ever again. Fruity, boozy, lingering, complex. I’m my opinion MR Gomez has created what must be one of the finest coffees on earth. When it comes back, don’t buy it, I want the whole lot.
I don't usually go for fruity beans, but I'd thought I'll give this ago (since I like passion fruit), all I can say is wow, full of flavour, would highly recommend to anyone who likes a fruity blend, can't wait till I can buy some more.

This coffee is amazing. I was drawn in by the Carbonic maceration process, as I’d had a few other coffees which had undergone this process and they never fail to impress. This one is no exception, it is amazing, full of fruit flavours works really well as a pour over, and also as a pretty tasty espresso.
