During the course of the year, we regularly feature fantastic small individual farmer micro-lots brought to us by The Green Collection. These coffees range from organic community lots to juicy, fruity natural processed coffees from small farms.

About the charity program:

We've teamed up with The Green Collection to raise money for their Coffee Kids Matters program based in Planadas, Tolima. The program aims to help young people with their eduction and a view to building skills that will allow them to advance their careers within the coffee industry. £10 from the sale of every bag will be donated directly to the program.

Farm Overview:

Las Brisas is located in the Planadas region and is owned by Davier Matoma. He owns a small farm covering just under 5 hectares planted with Caturra and Colombia F8. He focuses on producing his own coffees through careful hand harvesting and post harvest processing.

Harvesting and Processing:

Coffee cherry was hand-harvested focusing on careful selection of ripe coffee cherry. After harvest, the coffee was fermented in sealed containers for 192 hours. This was done as an experiment to push the fermentation in an attempt to create some very fruity, interesting flavours.
After fermentation, the coffee was dried on raised tables for 21 days. 

This style of processing has become very popular in the last few years and can often create some very interesting and unusual flavours. 


Tasting Notes: 

Juicy fruit notes that include pineapple, blueberries and tropic fruits with a maple syrup like sweetness. If you like coffees with juicy fruit flavours and intense character then this one is not to be missed!

Brewing:

This coffee works well for all brew methods. 

Filter: Dose 15g, water 250g. 

Espresso: Dose 17 gram to 40-gram yield over about 30 seconds. 

Due to the very limited volume, this coffee is available as whole bean only. We sell a range of grinders if you would like to grind this coffee fresh at home.
