During the course of the year, we regularly feature fantastic small individual farmer micro-lots brought to us by The Green Collection. These amazing coffees are limited edition coffee from individual small family farms usually less than 10 hectares in size and can be traced directly to single producer.
Producer Overview:
This fantastic coffee comes from finca La Esperanza, a farm covering just under 5 hectares at 1900 masl. The farm is owned by Jailer Andres Trujillo. He lives on the farm with his wife and two sons. They grow Colombia F8, San Bernado and Caturra and all coffee is very carefully hand harvested.
Harvesting and Processing:
Coffee is hand harvested focusing on the selection of only ripe cherry. After harvest the coffee is rested for about 12 hours in sacks before it is laid out to dry on raised tables underneath the protection of a poly-tunnel. This helps to protect the coffee from moisture and also provides some shading to help slow down the drying process. Coffee is regularly turned with additional hand sorting.
Tasting Notes:
If you like juicy, fruity naturals then this is the one for you! Packed with juicy fruit flavours that includes pineapple, mango, red berries and rich chocolate body.
Brewing:
This coffee works well for all brew methods.
Filter: Dose 15g, water 250g.
Espresso: Dose 17 gram to 40 gram yield over about 30 seconds.
This coffee is available as wholebean and pre ground but we recommend always grinding fresh before brewing. We sell arange of grindersif you would like to grind this coffee fresh at home.
In the pourover, this is a gorgeous, smooth, silky-sweet cup with ethereal hints of something like sun-ripened apricots; in the Aero-Press, the flavours come out on a whole new level! Wow! Deliciously intense tropical fruit notes - mango, pineapple, a hint of maracuja - just incredible. Totally smooth, like most Colombians, so if you like a silky cup without any harsh or acidic notes, this one's for you. One of the best two coffees we've had from Horsham so far. My wife likes it, but I'm utterly in love with it, which means I've now drunk most of what we ordered myself... and ordering another bag. Get it while you can. It's delicious on its own, but brewed in the AP with foamed full-fat sheep (6-7% butterfat) milk, you end up with something approaching a mango latte. Drink it fast - not just because it's gorgeous - because the most intense of these delicate fruit flavours do disappear quickly; our coffee arrived on day 4 after roasting (perfectly rested; right where you want it) and by day 8 I was chasing most of those notes around. The last tiny bit of it has now mellowed to a general sort of 'ripe yellow sun-warmed fruit' sweetness (ripe peach if you stretch) but any of the really distinct mango and pineapple notes have faded. Of note, we didn't pick up on the red berry notes, but maybe that's because we drank it too fast for those to have time to develop (sorry, not sorry ;) ).
We have been sampling a different coffee each month from different roasteries. This coffee is the best for us so far. We like a strong dark coffee but not bitter so we can taste more subtle flavours underneath. Guests comment positively about this coffee. Twice the price of supermarket beans but a luxury worth indulging in.
