Tasting Notes: Raspberry, Red Apple, Cane Sugar

Brewing: This coffee works well with all filter brewers and espresso. For filter we recommend a 1 - 16 brew ratio, and for espresso a 1 - 2.5 brew ratio.

This is the third coffee in our series of three stunning nano lots from Colombia from the most recent harvest. In November last year we started working with iFinca who are helping us to source some incredible special process microlots.

This experimental coffee comes from Finca La Cristalina. They produce a wide range of coffees across several different varietals. This experimental microlot was harvested from bourbon trees that are about 20 years old. Coffee is very carefully hand harvested followed by flotation in water to remove low density cherry and anything considered to be defective. 

After flotation the coffee was fermented in sacks in cool storage for 18 hrs and then laid out to dry on raised tables. The coffee was dried for 7 days until the moisture had reached 30% and then was stored in sacks for a further 7 days. Coffee was then dried a second time on raised tables until reaching 12% moisture content.
This is sometimes referred to as an 'interrupted natural' and is an experimental technique we've also come across in Costa Rica. Storing the coffee during the drying stage allows for a change in the fermentation process and can produce some very interesting flavour character.

Like our previous Colombia experimental lots this one is incredibly clean and juicy with wonderful flavour clarity. It's very difficult to pinpoint just three flavours with this one! You can expect clean juicy notes that include berries (raspberry), red apple and a wonderful sugar cane like sweetness.
