This amazing coffee is our third sourced directly from Cata in Colombia. They are dedicated to supporting and promoting small producers in Colombia with a focus on representing women in the coffee industry. 

There is no doubt that Colombia has become one of our favourite producing countries. We love the diversity on offer, the range of processing styles, and the recent focus on scientific and experimental processing methods. Most of the amazing coffees we buy from Colombia come from small farms covering less than 20 hectares and are typically bright, juicy washed coffees. This one is a little bit different. It's a lovely juicy washed coffee but the process has brought out a slightly different flavour profile.

This coffee comes from a farm owned and managed by Nidia Narvaez and her husband Beto and has been harvested from Pink Bourbon varietal trees and processed using a very unusual multi-stage anaerobic fermentation method.

Farm Overview:

The farm covers about 5 hectares and is planted with the unusual Pink Bourbon varietal. This is a hybrid of the yellow and red bourbon trees and is very unusual and difficult to cultivate due to the recessive genes usually dominated by either yellow or red. Producers that do successfully grow this varietal tend to focus on very careful selection and processing to get the highest cup score from the coffee.

Nidia and Beto have become well know for focusing on this unusual varietal and have won several national and local awards as a result of their work with the Pink Bourbon varietal.

Harvesting and Processing:

Coffee was hand-harvested making sure that only perfectly ripe cherry was selected for a controlled fermentation process.

This particular coffee was processed as a washed coffee but using controlled and tracked methods. 

1. Harvesting with careful hand sorting.

2. 12 hr aerobic fermentation with exposure to oxygen

3. Depulped to removed the outer fruit layer

4. Fermented in tanks with temperature monitored water for 40 hours

5. Washed to ensure all fruit has been removed

6. Stage one drying in the sun at high temperature for two days

7. Stage two drying at low temperature in shade under a polytunnel for 30 days

Once dried the coffee was rested, milled and further sorted before preparing for export to the UK.

Tasting Notes: 

Raspberry, pineapple, tropical fruits and a fruit syrup like sweetness. This coffee is so unusual and distinctive and one not to be missed! This is an amazingly complex washed coffee with wonderful sweetness and a cup score of 88 points (As score by Bradley, licensed Q grader and the team at origin).

Brewing:

Due to the delicate nature of this coffee we recommend brewing for filter or immersion eg. hario, v60 chemex, aeropress. Example: Dose 15g, water 250g. This coffee will still make a wonderful espresso but will require a high standard of equipment and some careful experimentation. We recommend a lower pump pressure (6-7 bar) and a dose of 17 gram to 40 gram yield over about 30 seconds. 

This coffee is available as wholebean and pre ground but we recommend always grinding fresh before brewing. We sell a range of grinders if you would like to grind this coffee fresh at home.

    Delicious taster pack

    We ordered the taster pack to try a few batches before we pick something larger next time… no idea how we are going to chose as they are all delicious. I love the packaging and branding too, will definitely buy from these guys again.

    We’re not easily pleased - honest!

    This is our new favourite. We were disappointed that our usual Kenyan coffee was not available, but true to form Horsham never disappoints. This has a slightly fuller depth and richness to the flavour and makes a perfect cup every time. We’re on our 2nd kilo now!

    Makes my mornings that much better

    I upgraded from a cheap blade grinder to this and the difference is night and day. Consistency is key when it comes to good coffee and until I got this I was making a completely different cup each morning. Now I really feel like I have control over my grind size and my coffee quality has improved massively.

    Easy to use, easy to clean, well priced compared to others on the market, what's not to love?

    Class grinder

    I recently was looking for an electric grinder that would not be over expensive but better than the cheaper end models so after lots of reviews I managed to settle on the wilfa . I also watched a James Hoffmann YouTube video of this grinder and liked what he had to say . Now I’ve been using it a few weeks it’s superb and quite quiet and very quick at grinding 14g of beans in no time at all . Overall I expect it to last a long time as it’s well built and easy to clean
