Producer Overview:


The Aguilera brothers are a group of 12 siblings who have been focusing on producing speciality micro-lots for over 15 years and are well know around the world. As a group they own several farms around the West Valley area of Costa Rica and their micro mill is located just a few minutes drive from La Isla micro mill, another fantastic coffee producer!

The farms are planted with a range of different varietals including Villa Sarchi, Catuai, SL28 and Geisha. Their focus is on producing mainly honey and natural microlots with varietal separation. We were fortunate to have been able to visit them in 2020 and you can see some of the incredible ripe cherry arriving to be dried on their own football field!


Harvesting and Processing:


This coffee has been harvested from SL28 trees. This varietal is mainly grown in Kenya and has become famous for producing coffee with amazing cup scores and vibrant acidity. You can read more about SL28 on the World Coffee Research website. When we cupped this sample the vibrant acidity and similarity to Kenya coffee is immediately obvious making this a unique and very different coffee.

After harvest the coffee is pulped using a Penagos Eco-pulper to remove the outer layer of fruit:

Once the outer layer of fruit has been removed the coffee is laid out to dry on concrete patios under the protection of a poly tunnel:

Brewing:

Our coffee capsules are compatible with all original Nespresso compatible home machines (excluding commercial models and the Vertuo type.) Water temperature and machine quality makes a big difference to the final product. For best results make sure to fully warm the machine and flush water through before brewing.

Our Nespresso compatible capsules are great brewed at a variety of ratios. For a short, intense coffee we recommend brewing 30-40ml. For a longer coffee, we suggest 60-70ml.

Love the coffee.

Love the coffee. But are they too tightly pakced? My Nespresso machine seemed to be struggling to get the water through. The flow was much slower than for other capsules. But worth waiting for?!?

A great discovery
