Coffee farmers in Peru produce some incredible and very diverse coffees using a wide variety of processing methods. The production of high scoring speciality coffee is something that has only started to happen in the last few years and we are very pleased to be a part of the growth. Harvesting and Processing:

Saul Menor Taica owns 4 hectares of land in the San Francisco area of the Huabal district. The altitude at the farm ranges from 1900 to 2000 masl and Saul grows  Caturra and Catimor and Castillo. This lot contains only Caturra from the highest altitude section of the farm.

Prior to producing speciality coffee Saul focused mainly on growing coffee that would produce a high yield from Catimor trees. Over the last few years, he has changed his direction focusing on producing high cup score micro-lots carefully harvested from his Caturra trees. This varietal is known for producing coffees with excellent cup scores with vibrant acidity and fruit notes.

Coffee is harvested by hand from the Caturra trees and kept separate from the other varietals. This lot was created by keeping the highest altitude coffee separate during the harvest. 

After harvesting the was washed through flotation, pulped and dry fermented before a second stage of washing. This style of processing has helped to create a stunning coffee with balanced but vibrant acidity.

Tasting Notes: 

This is an excellent example of a crips, clean, juicy coffee from Peru. Tasting notes include tangerine, maple syrup and red berries.

Brewing:

This coffee works well for all brew methods. 

Filter: Dose 15g, water 250g. 

Espresso: Dose 17 gram to 40 gram yield over about 30 seconds. 

This coffee is available as whole bean and pre-ground, but we recommend always grinding fresh before brewing. We sell a range of grinders if you would like to grind this coffee fresh at home.
