  • About San Juanillo Red Honey | Costa Rica

    This Red Honey processed coffee was hand-harvested from the Marsallesa varietal trees on the farm. Tomas and Allan employ a team of highly skilled pickers who are paid a premium for selecting only the ripest cherry.

    After harvesting, the coffee is transported to the Patalillo micro mill. The coffee cherry is floated in a fermentation tank to remove any defective cherry. The cherry is then fermented for 12-16 hours after the flotation process. This kickstarts the natural fermentation process, and tests indicate that this can contribute to better flavours in the cup.

    After resting the coffee is pulped to remove the outer layer of fruit and the coffee is taken directly to raised drying tables for an initial two day drying period. The raised tables allow the coffee to dry quickly with better airflow; this reduces the chances of mould growth and allows the mucilage to dry enough that it will stick to the outer parchment layer of the beans. The coffee is then moved to concrete patios for drying. They call this process red honey as the amount of mucilage and speed of drying tend to cause the mucilage to dry as a deep, vibrant red colour.

Tomas Gutierrez and Allan Vargas bought the farm in 2007 with the intention of regenerating the landscape and soil and planting new and exciting varieties. We first bought coffee from San Juanillo farm in 2019 and have visited several times. They grow various varietals using natural farming methods that encourage insect and bird life.

We've been buying our Costa Rican coffees direct from the same producers for several years with the help of Selva coffee.

Beautiful Coffee

I brewed this as filter (15g/250ml) and have found it completely delicious. Lots of sweetness and with a crisp juiciness that follows. The apple notes come through more and more as your coffee cools.

As an aside, these are some of the most beautiful coffee beans - you drink with your eyes and they look so good i almost want to gobble them up before they even hit the grinder.

This has a different flavour profile to what I would usually go for but thought I would try something different and I am so glad I did. This coffee is delicious poured over milk after brewing in a Moka pot with different layers of flavour as you drink it down.
