We've got a fantastic pair of coffees to share with you that we've combined together as a processing pack.

Both of these coffees are available to purchase on their own but we decided to pair these together to encourage customers to try our two different varietals and processes from Costa Rica. This is a great way to taste coffees that have been processed using very different methods resulting in very different flavours.

The set contains the following two coffees:

Santa Fe Geisha - Honey process

This Geisha micro lot comes from several local farms. Many coffee producers in this region grow small amounts of the Geisha varietal. This will be harvested separately from the other coffees and delivered to the mill for processing.

The coffee is sorted using flotation and pulped to remove the outer layer of fruit. After processing the coffee was dried on raised tables in a thin layer to ensure low fermentation and very consistent and even drying.

Tasting notes include red apple, caramel with a cocoa-like finish. 

San Juanillo Marsallesa - Carbonic Maceration

This coffee was hand-harvested from the Marsallesa varietal trees on the farm. Tomas and Allan (owners of the farm) employ a team of highly skilled pickers who are paid a premium for selecting only the ripest cherry. After harvesting the coffee is transported to the Patalillo micro mill. The coffee cherry is floated in a fermentation tank to remove any defective cherry and then placed into sealed drums with a one-way pressure release valve and fermented for 48 hrs. The coffee was then moved to raised drying tables inside a polytunnel to dry as a natural processed coffee. 

Tasting notes include prune, white grape and honey.

Brewing:

This coffee works well for all brew methods but the bright and juicy flavours tend to shine when brewing as an Aeropress or filter brew method.

Filter: Dose 15g, water 250g. 

Espresso: Dose 17 gram to 40 gram yield over about 30 seconds. 

This pack is available as whole bean only. We recommend always grinding fresh before brewing. We sell a range of grinders if you would like to grind this coffee fresh at home.
