Filter: Dose 15g-16g, water 250g.
Espresso: Dose 18 gram to 40-42 gram yield over about 30 seconds.

About El Paraiso Anaerobic Washed | Colombia
This is an incredible coffee is back for 2024! Produced using a complex and very unique post harvest technique:
1. Coffee was carefully hand harvested to select only very ripe cherry.
2. The coffee was washed and soaked in water for 36 hours
3. Coffee was pulped to remove the fruit
4. The coffee with mucilage was fermented with added micro-organisms for 12 hours
5. Washed with cold water using a 'thermal shock' process
6. Controlled drying using a mechanical de-humidifier
This two stage fermentation process creates some incredible tasting notes that include cherry, raspberry, red berries and floral notes. -

Yenni Esperanza is the older sister of four brothers and a founding partner of Finca El Paraiso. She works with her brother, Diego Samuel Bermudez, with a focus on creating incredible experimental microlots using very unusual processing techniques.

First purchase from this company, so a complete unknown. Such a well roasted coffee. Great acidity and sweetness at the same time. Fragrance of peach when you first brew the coffee. Would recommend to anyone. Mind blown.
Trying this as you’ve run out of San Juanillo… which I still prefer but this is nice ,just not quite the same depth but good as my early coffee

An absolute joy to brew and drink. Brewing V60 and Aeropress in the mid to high 80s brought out some wonderful fruity notes. Best coffee of the year so far.
